From almost-clear acacia to dark chestnut with its slight bitterness, Bioly offers honey as separate varieties rather than one blend, each with its own colour, aroma and way of crystallising. It is a brand of La Vita, a company based near Rome, and we supply it to food retail chains and online stores in the Kingdom.

Every flower in its own jar

أسّس Bioly، كما يقول المنتِج، أستاذٌ في علم الحشرات تزيد خبرته في تربية النحل على 35 سنة. وتقوم العلامة على فكرة واحدة: أن لكل صنفٍ من العسل زهرته ولونه وطعمه، ولذلك بُنيت تشكيلتها على عسل الزهرة الواحدة. ويقول المنتِج أيضاً إن لكل صنف نكهةً تعكس الأزهار والنباتات التي جُمع منها.

Bioly was founded, the producer says, by an entomology professor with more than 35 years of beekeeping behind him. The brand rests on one idea: every honey has its own flower, colour and taste, which is why its range is built on single-flower honey. The producer also says each variety has a flavour that reflects the flowers and plants it was harvested from.

Six honeys, from almost clear to dark amber

خمسة أصناف من زهرة واحدة وصنفٌ متعدد الأزهار، كلٌّ في عبوة زجاجية شفافة بغطاء معدني، 400 غرام. نورّد منها اليوم أربعة، والزعتر والخزامى من تشكيلة المنتِج.

Five single-flower honeys and one wildflower, each in a clear 400 g glass jar with a metal lid. We supply four of them today; thyme and lavender complete the producer's range.

من أزهار أنواع عدة من شجر الكستناء. داكن كثيف القوام، وفي طعمه مرارة خفيفة.From the blossom of several chestnut species. Dark and dense, with a slight bitterness.

Quality limits in writing, variety by variety

تنشر La Vita لكل صنف نشرةً تحدد فيها حدوداً للرطوبة والسكريات والحموضة وغيرها. ومنها قراءتان تتأثران بالتسخين وطول التخزين: يرتفع HMF وينخفض نشاط الدياستاز.

La Vita publishes a data sheet for each variety, setting limits for moisture, sugars, acidity and more. Two of those readings respond to heat and storage time: HMF rises and diastase activity falls.

حين يتبلور العسل

When honey crystallises

التبلور تغيّرٌ في قوام العسل، وتنصّ نشرة المنتِج على أنه لا يدل على غش ولا على فساد. فالعسل محلول سكري مشبع، أغلبه فركتوز وجلوكوز، وكلما زادت نسبة الجلوكوز إلى الماء أسرع إليه التبلور.

Crystallisation is a change in texture, and the producer's data sheet is clear that it is no sign of adulteration or spoilage. Honey is a supersaturated sugar solution, mostly fructose and glucose, and the higher the glucose relative to water, the sooner crystals form.

ويختلف ذلك من صنف إلى آخر: الأكاسيا بطيئة التبلور، والكستناء والزعتر قليلا الميل إليه، والزهور والزيزفون والخزامى تتبلور ببلورات متوسطة. وبحسب نشرة المنتِج، يبطئ التخزين تحت 4 درجات مئوية التبلور، وتعيد الحرارة فوق 25 درجة العسلَ إلى السيولة.

It varies by variety: acacia crystallises slowly, chestnut and thyme have little tendency to, and wildflower, linden and lavender form medium crystals. According to the producer's data sheet, storage below 4°C slows the process, and warmth above 25°C brings the honey back to liquid.
